Week 3 - More Veggies, Less Meat

2 Skin-On Salmon Fillets
10 Ounces Ground Pork

medium leeks, thinly sliced
10 cloves garlic, minced
6 Ounces Brussels Sprouts
1 Butternut Squash
1 Acorn Squash
1¼ Cups Black Beans
1 Bunch Swiss Chard
2 Yellow Onion
2 Roasted Piquillo Peppers
8 Ounces Endives
1 Shallot
1 Bunch Garlic Chives
4 Ounces Baby Bok Choy
1-Inch Piece Ginger

Fruit
1 Lime
1 Granny Smith Apple
2 Lemon

Carbs
10 ounce package refrigerated pizza dough(i bought croissant dough)
6 Ounces Rigatoni Pasta
Corn Tortillas
⅔ Cup Semi-Pearled Farro (Left over from week 2)
6 Ounces Bucatini Pasta (I'll use the leftover fettuccine from week 2)
½ Pound Korean Rice Cakes


Dairy
1 cup shredded Gruyere or Swiss cheese (4 ounces) (Left over from week 2)
3 Ounces Gouda Cheese
⅓ Cup Grated Parmesan Cheese (left over from week 1)
¾ Cup Milk
2 Ounces Queso Fresco (I have this left over from Week 1)
¼ Cup Sour Cream
¼ Cup Crumbled Blue Cheese (I'll skip this)
4 Tablespoons Crème Fraîche (make own with 2 TBSP sour cream and 1 cup whipping cream)

Spices
dried basil, crushed
1 Bunch Cilantro
1 Bunch Mint (Skipped due ot budget)

Extras
2 tablespoons Dijon-style mustard
chopped almonds, toasted (leftover from week 1)
2 Tablespoons Roasted, Peeled Chestnuts(I skipped this ingredient due to budget)
1/2 Cup Panko Breadcrumbs(leftover week 2)
2 Teaspoons Ras El Hanout & Dried Rubbed Sage
1 Teaspoon Smoked Paprika
6 Tablespoons Butter
1 Tablespoon Honey
¼ Cup Walnuts(I skipped buying this due to budget!)
1 Teaspoon Ground Nutmeg (I skipped this ingredient due to budget)
2 Tablespoons Black Bean Sauce (Found at Asian Grocery)
1 Tablespoon Gochujang (I'll sue the Sate sauce we have in the fridge, a Thai chili oil)
1 Tablespoon Soy Glaze (reduced soy, mirin, sugar)

 Groceries can out about $60 so I'm closer to target this week, but still over. I bought a few spices, but really all the ingredients were necessary (maybe I could have found an alternative instead of buying the whipping cream to make the Crème Fraîche. Next week I'm going ot try shopping for supplies at Trader Joe's which might be cheaper then the QFC (at least in the cheese department?)

I'm a sucker for croissants, so I switched it from the pizza dough. I also made one leek according to the recipe, and one with chicken/spring onions/cream cheese and the left over leeks. I bought a half pack on the croissant dough and wish I'd bought more because it was immensely tasty!
I liked this one a lot! I think if I made it again, I'd make homemade bread crumbs, like in the recipe last week and more Brussels sprouts!!
